Rinse the Quinoa grains and cook them in 4 cups of boiling water for 15 minutes or until fluffy. Drain excess water if any.
In a pot, heat oil and add mustard seeds and cumin seeds. Once they splutter, add minced garlic, and sauté for a minute.
Add tamarind pulp, chopped tomatoes, and all the spice powders. Cook until tomatoes are soft.
Add the cooked quinoa to the rasam mixture. Stir well and garnish with fresh coriander leaves.
