  • 1. Rinse the quinoa thoroughly and soak it in water for 10 minutes. 2. In a pan, heat oil over medium heat. Add mustard seeds and cumin seeds and let them splutter. 3. Add chopped onion and green chili and sauté until onion turns translucent. 4. Add chopped vegetables, salt to taste, and turmeric powder. Mix well. 5. Add 2 cups of water and bring it to boil. 6. Drain the soaked quinoa and add it to the pan. Mix well. 7. Cover the pan and cook on low heat for 15 minutes or until the quinoa is cooked. 8. Once the quinoa is cooked, add lemon juice and mix well. 9. Garnish with coriander leaves and serve hot.
